Syphon

Syphon (or Siphon) was Invented in 1840 and has been refined several times to take its form today. The Syphon produces a stunning cup of coffee and is one of the coolest brewing methods.
Step 1
Three Cup Brewer
Grind 31 grams of coffee beans to a medium grind size similar to regular sand, not too fine. Use a high-quality conical burr or flat burr grinder. Do not use a blade grinder. Grind coffee beans just before brewing to retain their full flavor and aroma.

Prepare
Fill the bottom globe with water and place it over the heat source.

Boil Water
Insert the top chamber into the bottom globe, do not fit them too tightly. Turn on the heat. When water begins to boil, tightly secure the top chamber to the bottom globe.

Adjust Temperature
When the water in the bottom globe moves to the top chamber, stir the water in the top chamber with a paddle to cool the temperature down to 93.5°C. Reduce the heat. Be careful not to let the water in the top chamber flow back to the bottom globe.

Brew
Add ground coffee into the chamber, stir well, let the coffee steep for 1 to 2 minutes.

Finish
Stir one more time, turn off the heat, remove the heat source from the bottom globe. Brewing completes when all the coffee on the top chamber flows back to the bottom globe.
